I've only really used aquafaba a handful of times. I made some really yummy divinity with it last Christmas. And I made some awesome "marshmallow" fluff. I have an Aquafabulous cookbook that needs to be reviewed on my blog soon, so I need to get to work! The first time, they came out very nice in terms of texture (nice and crisp) but spread out way more than I would've liked. The second time was an utter failure. I think water got into the whip and it never fluffed up properly. I tried to bake it anyway, but it really didn't work. It's almost impossible to make meringue or aqua faba in humid weather. It never "dries" and instead gets a sticky, glue-y texture.
