Yummy Eats

Hey everyone! Happy weekend to you and almost happy weekend to me :) Just a few more hours! Do you guys have anything fun planned? I think this weekend is going to be a big spring cleaning weekend for me. We are expecting a lot of rain over the next week so I think it is a perfect time to just buckle down and do a nice deep cleaning. I'm also going to take a trip to Whole Foods. I only go once every few months now just because of the price tag but I'm in a treat yo self kind of mood lately so I figure why not! I also want to pick up a few things I can only find there so it makes sense :)

Today I'm going to show you a few meals that I enjoyed over the week. I've been eating some pretty delicious food lately. I've been somewhat more inspired in the kitchen lately and I'm also listening to what my body is craving so that helps as well.


First up I have a bento box lunch. On the left is my typical favorite salad with romaine, almonds, cranberries and the Panera Asian Vinaigrette. On the right is some veggies, two stuffed grape leaves and some hummus.


This was seriously amazing you guys! This is actually a restaurant recreation I made! I originally had it at an Italian restaurant and it is pasta with eggplant, asparagus and peas in a red sauce. When I ordered it I made sure to say no cheese because they can be sneaky about that stuff and I used some nooch when I made it myself. I also used my favorite gluten free pasta. I also made sure to use mostly veggies with some pasta added in because I like mine veggie heavy :)


This is the same salad as above with a granny smith apple added in to it.


This is one of the Sun Butter Cookies that Bianca sent me in my care package! You guys! This is GOOD. Like really good. It is super tender and "buttery" and not too sweet. I've been savoring these slowly, I still have a few left for treats next week. 


Finally, I decided to do a Pizza Friday last night! I made a tortilla pizza with a tortilla as the crust, used Daiya mozzarella and tried a little bit of the Tofurky Pepp'roni that I found! I don't even know why I bought it because I never liked pepperoni to begin with but I was so curious. I knew better than to do the whole pizza with it because I didn't know if I would like it so I just tried it on a quarter. It was better than I thought it would be but not my favorite. I will finish what I have but I won't buy it again kind of thing.


Finally, I mentioned a few weeks ago that I was on the prowl for a crossbody bag. I just find them easier to carry, especially because my bag tends to be heavy. I had gone to every store with no luck so I finally decided to try searching Vegan Crossbody bags on eBay and immediately found this beauty!! I love the look of it, the title said vegan which takes all of the guesswork out of it and it looked big enough without being massive. Best part was it was only $23.99 (and discounted slightly at checkout with free shipping so I paid $22.97). I received it yesterday and it is GORGEOUS and super super soft. I chose the gray because I thought it would be a good color to use year round if necessary. And I also really love gray. I think it's my favorite color at the moment ;) Anyway, I thought I would share because I told you I would let you know if I found something! Oh and the shipping was super fast. I ordered it on Sunday and had it by Friday of a holiday week.

I'm seriously craving stuffed grape leaves! Your salads and bento box are beautiful!That pasta dish looks really, really delicious! I think I tried a vegan pepperoni, maybe it was Ives? Anyway, I felt the same it was okay but I'm not in a rush to buy it again.
Can't wait to see what you get at Whole Foods!

Oh, and I love that bag!! What a great price too. I often feel like vegan shoes, bags etc. are way too expensive. Great find!

I miss pepperoni more than bacon XD The tofurky pepperoni is the best I've tasted! Hope you got all your spring cleaning done this weekend.

I was weirded out by pepperoni even in my omni years, but I'm glad you reviewed it in case I had the urge! Your pasta dish looks delicious! I'm going to try a pasta salad for lunch this week, and this is totally inspiring!

Stuffed grape leaves are seriously the best. Thank you so much! The pasta was really yummy, I love that combination of veggies and I never would have thought of it on my own. I feel the same way about the pepperoni. I really don't know what possessed me to buy it but my curiosity is satisfied!

That's so funny! I've never been a bacon OR pepperoni person and I don't even have a desire to find a bacon substitute. I really wanted to find a good breakfast sausage substitute and luckily there are tons of good ones out there.

Haha that's so funny! It's funny how we want to try things we hated when we were omni in its vegan (or vegetarian_ form. I remember when I was a vegetarian I decided to try Morningstar Corn Dogs even though I hated hot dogs and I was like ewww why did I try this. I hated them hahaha!

Can't wait to see your pasta salad dish! Hope you enjoy it!

Thank you! Nope, no problem getting it to melt! I do wish it would brown a little because I would prefer it a little crispy but I'll take the melting!
