Random Stuff I Ate

Hey everyone!! I hope you are well. I am really excited because it is the day before my trip to Florida and the only day I am working this week. It is so close I can smell it. We have some really fun stuff planned and I just can't wait to see my bestie. The past few weeks have been really difficult for me so this break couldn't have come at a better time.

As I mentioned previously I did not go grocery shopping because I just didn't think it was necessary. I have a few random meals to share but not a ton. They were all good though so there is that. I am still going to post on Friday, and next week will be Florida wrap up week! I'm planning on doing a post on just what I ate there and a post on some of the stuff we did there. I can't wait to share it with you!

Anyway, let's check out some random meals:


Some chip crumbs and salsa. This was the bottom of the bag and difficult to dip but it was still tasty. I saved the actual crumbs because they will be great in a taco salad or a taco soup kind of situation.


We have a deli next door to where I work that makes actual deli food but has a ton of South American fare as well (the owners are from Venezuela). When I don't bring lunch and I need food I'll grab some rice, broccoli and some yucca. It is delicious.


Something I made a few times this week was the Aldi's baked teriyaki tofu with some roasted veggies and rice. It was very delicious and comes together so quickly.

What I Ate In A Day

Hey everyone! I hope all is well, Happy Friday! This week was definitely better than last and I'm eating more normally. I decided to photograph the meals I ate in one day to share with you. I don't know how many calories it is and I don't care because it's three meals which I haven't done in at least a week.

Anyway, you'll see for the most part this is a lazy day for meals. Breakfast and lunch were especially lazy because I didn't particularly care or feel like making anything so I just kind of figured out easy meals. This was what I ate on Wednesday so you'll see that helped me make my decision for lunch 😂

Anyway, here is what I ate in a day!


For breakfast I had more of the Trader Joe's Maple Ladders cereal with some sliced banana and unsweetened almond milk.


For lunch I stopped by the store to take part in Sushi Wednesday. These yummy rolls cost me a total of $5 so it was worth the splurge for minimal effort. Once I get back from Florida one of the meals that I have in mind is a sushi bowl so I'm looking forward to making that in the future! In the meantime, this was delicious and was a perfect lazy meal for me.


For dinner I had a mushroom risotto burger from Aldi's and some roasted potatoes. Super lazy but also good so I'm fine with it. 

I'm super tired and have a lot to accomplish this weekend but I'm just going to try to push through it because I get to relax next week! I'm hoping it'll be warm in Florida because I just need some sun and some time off. I'm really excited to be able to share my trip with you as I always do!

Some Stuff I Ate

Hey everyone, I hope you are all doing well! Thank you so much for your sweet, supportive comments on my last post. It was a pretty horrible week and made me realize that some pretty big changes need to happen for the sake of my sanity and I'm working on making those changes a reality. Other than that my appetite is returning so I've been able to eat a few more meals and they have been more substantial. I don't have a ton to share and what I've been eating has been pretty much the same but I figured I'd still share with you.


Up first was a little prey that I did. I really didn't want to sit and peel and cut a million potatoes but I did it and I'm glad I did. I have a ton of roasted potatoes for the week and there is nothing wrong with a ton of roasted potatoes 😂


I had some whole grain toast with peanut butter and banana for breakfast one day.


I tried the mushroom risotto burgers from Aldi's finally! The first time I had it I put it on a bun and added avocado because I figured that would be delicious. I really liked the burger but I think the bun and avocado totally hid the flavor. I served that up with some of my potatoes, of course.


Last night I had another one of the burgers. I really liked the flavor of it and I am glad that I got the two boxes. However, I found that they added a lot of unnecessary veggies. I really wanted to taste the mushroom flavor but there were things like peas and other veggies that didn't really belong. There was kale and that was fine but I really wanted a more robust mushroom flavor. That said, the burger is still delicious and for this meal I had it on its own with no bun, some potatoes and some carrots. It was absolutely delicious!

Sorry I haven't had more variety lately but as I am feeling better I am sure that things will get back to normal. Although I decided not to go grocery shopping this week because I am going to Florida on the 30th and decided to try and worth through some stuff in my pantry before I head out. I am so excited to go because omg you guys, IT'S FUCKING COLD. With wind chill it was like -15 degrees yesterday. It's so brutal so I'm excited for some warmer temperatures in my near future.

Quickie

Hey everyone, I hope that all is well. Today's post is going to be a quickie because I still have no appetite and am not eating a ton. I'm having a pretty bad mental health week so I'm just doing the best I can to get through it. For now, I'll just share what I have managed to eat and photograph and hopefully by Tuesday I'll have some for interesting meals to share with you.


I decided to pick up a pumpernickel bagel with tofutti. I took off a bunch of that cream cheese because it was a lot and ate half for breakfast and half for lunch.


This was a dinner one day. Avocado toast and an apple.

Sorry this post was short and boring. I do have a bunch of delicious food to make and hopefully I'll feel like making it soon. My goal is to have way more interesting and delicious food on Tuesday since the weekend is almost here.

Aldi's Haul & Stuff I Ate

Hey everyone! I hope you are well. I'm excited to say that I was able to take a trip out to Aldi's on Sunday with the company of my mom and was able to get some fun stuff. Since we aren't there often I tried to stock up on things. Some things I took a gamble on since I've never tried it but I guess we'll see. Anyway, I have a haul to share (minus a few things that didn't make it into the picture) and a few meals that I ate. My appetite has been nonexistent so this is the best that I've been able to do. Hopefully things will turn around and I'll be able to share some more exciting meals.


So here is the Aldi's haul. I got some sweet butter lettuce, grapes ($.99/lb), 2 packages of Teriyaki baked tofu, some Seedtastic bread that reminded me of Dave's Killer Bread (at a way better price), two packages of the Mushroom Risotto Veggie Burgers and 2 bags of the Gluten Free Black Sesame Brown Rice Crisps. Unpictured is some black cherry sparkling water, potatoes and Unsweetened Vanilla Almond Milk. I'm excited to try the Mushroom Risotto burgers. They seem to have pretty god ingredients so I wasn't too concerned about them being "processed" and I think it'll be delicious! I got two of them because I knew I'd be mad if I only got one and loved it.


So my first sad meal was the last of my apple crisp. I ate this with almond milk instead of yogurt and it rehydrated the oats into an oatmeal like state and it was really delicious.


For dinner one night I had a piece of avocado toast and a giant carrot from Whole Foods.


For this breakfast I had the maple ladders cereal from Trader Joe's with banana and pecan chips on top.


Finally this is a delicious plate of chips and guac that I ate while I was out running errands all day yesterday.

H-Mart Haul & What I Ate In A Day

Hey everyone! I hope that you are doing well! It's Friday again, yay! I'm really excited because I went back to the gym today! It has been a goal for such a long time but I was worried about it because the last time I tried to go back it triggered a lot of Fibro pain and it kind of scared me away. This time I'm just being more aware of the workouts that I do and I'm going to try to avoid anything that tends to trigger pain (the bike definitely was a trigger, for example). Anyway, I'm really glad that I went and I'm hoping to turn this into a consistent habit so I can start getting back into shape and improving my fitness. Supposedly exercise is one of the best ways to manage Fibro symptoms so I guess we'll see!

Anyway, for today I have a small haul from H-Mart and a What I Ate In A Day type of post in one. I meal prepped this week so I've been eating the same stuff for the most part so it didn't make sense to take pics of the same meals every day. So this is an example of how I've been eating!


So here is my small H-Mart haul! I got the rice cakes (!!!), some scallions (for $.89 a bunch), gochujang (you guys, I read SO MANY LABELS!! Every other brand had chemicals and high fructose corn syrup. This was the cleanest brand I could find), some chili garlic sauce, firm tofu (stir fry) and soft tofu (I'm going to crumble that in with the rice cakes). I'm going to make the rice cakes this weekend, I can't wait to try!


I decided to use my favorite Monbento bento box to pack up my breakfast and lunch. For breakfast I have more of my apple crisp and yogurt (go with vanilla yogurt if you are going to use it for something like this - it's SO MUCH BETTER that the plain). For lunch I had some delicious stir fry (sauce made from low sodium tamari, a tiny bit of agave, chili garlic sauce, rice wine vinegar and a little cornstarch to thicken it up) with tofu, mushrooms, broccoli and asparagus with some jasmine rice. When I know I won't get to my fresh veggies in time I put them all in a container in the freezer and use them for stir fries. This is the combination I happened to have now. It was so good.


For snack I had a pear.


For dinner I had this delicious Mediterranean type plate with dolmas, carrot, cucumber tomato salad with olive oil, red wine vinegar, salt and pepper and some hummus. Another awesome meal.

My final snack was some cashews from the Israeli market that I posted about in my last post. All in all I'd say a really delicious day of meals and I'm doing well with not consuming a ton of processed food and chemicals. I'm aware that a few things like sauces have some preservatives in them but I'm cut out most of the packaged food and I'm really glad that I have.

So. Many. Hauls. (And Some Meals!)

Hey you guys! I hope that you are well and that you had a great weekend! Mine was good except I apparently can't get my shit together to just stop and relax. On Sunday I went out and ran so many errands which included FOUR grocery stores (WTF!?). I have hauls for three of them (one was just the Turkish market for my favorite hummus) and I am really excited to share them with you. I was not able to get to H-Mart because I just didn't have it in me at the end of that but I am hoping to go tomorrow after work. I figured three hauls is still good enough (😂) and I have a few meals and things to share at the end!


So up first we have Whole Foods. I rarely ever go there but there were a few things I wanted and knew I could only get there so I made the trek. Before I get into the haul I have to say I'm so proud of my restraint. I wanted EVERYTHING and only brought these few items home so yay! Anyway, I got a container of roasted mushrooms and eggplant to have with my hummus (sometimes you make concessions when you know you won't have the energy to cook), some Teeccino to try (maybe I can kick the coffee for good), some carrots because Whole Foods has THE BEST CARROTS, Earth Balance sticks to keep in the freezer if I need to bake at any point, Kite Hill yogurt (on sale 4/$5) and some Mother In Law's white kimchi. As you know I'm not a fan of most vegan yogurts and I actually find Kite Hill to be way too sweet but I really wanted yogurt so I got the plain to have with fruit and granola and the vanilla and key lime for other specific things 😉


Next I went to Trader Joe's and got just a few things. I got some honey crisp apples for the first recipe test for my e-book, some dolmas, coconut oil, pears, Mango Kombucha to try, cucumbers, tomatoes and frozen mango. Can you tell I've been craving mango lately?


Finally I have a small haul from the Israeli Market!! I go there for their amazing soup and their cashews and the other stuff was a bonus. I grabbed some vegetable barley soup (which I brought with me for lunch today), some potato leek soup (it was frozen but it is my favorite soup they make so I am giving it a try out of the freezer) some Date bars which just have dates and nuts and stuff, a point of the most delicious cashews and a big ass container of tahini.


This gorgeousness is my first recipe test for my e-book! I made a breakfast apple crisp which is essentially baked apples with a granola type topping.


I had some for breakfast and it was really good! There are a few tweaks I need to make but I love it and I'm excited! I drizzled some vanilla yogurt on top to mimic the creaminess of vanilla ice cream or vegan whipped cream on a traditional apple crisp and it was amazing.


Finally I thought I'd share a Mediterranean plate I made! It's been a long time since I've shared one and this one was really good. The roasted veggies are SO GOOD with the hummus, I highly recommend it.

Stuff I'm Into

Hey guys! I hope that you are well and had a good week! I am getting back into my normal routine and trying to catch up on sleep. I should be back to regular food posts next week and I'm looking forward to it! For today, I thought it would be fun to share some of the things I've been loving lately. I would love to hear about the things you've been enjoying as well!

Netflix


It shouldn't be a surprise that I love The Great British Bake Off because I've mentioned it before in another favorites post. However, I took a break for a few season when Mary Berry and the two hosts left the show. Paul is entertaining but I tried watching with all the new people and I just wasn't able to get into it. I heard that there was an all vegan episode on the latest season to hit Netflix so I decided to give it another try. Naturally this leads to a 2 season binge and I can't get enough. I still miss Mel and Sue and Mary but the new crew has grown on me and the baking is as inspiring as always.


Do you guys have that movie that you keep checking for on Netflix? My movie was Eternal Sunshine of the Spotless Mind. I love this movie and I have been wanting to watch it for so long but I was never able to find it on Netflix. I decided to try searching for it a week or two ago and it was there! If you have never seen this movie I highly recommend watching it! It's really good and I thought Jim Carrey and Kate Winslet were amazing in it. It also made me hate Elijah Wood and I didn't think that was possible 😂

Disney/Pixar

Over New Year's there were Disney movie marathons all over the place. Thanks to this I was able to watch a movie that I hadn't seen yet. In addition, Netflix added another movie I hadn't seen and both of them were incredible so I wanted to share!


Tangled was a Disney movie that I had somehow never seen but always wanted to watch. It hasn't been on Netflix since I've had the service and it was never on TV during these marathons. FINALLY it was on and I caught it during a Disney movie marathon and I FREAKING LOVED IT. It quickly became one of my new favorite Disney movies. I love the story and I love Rapunzel and it was beautiful and I just loved it.


Over Christmas I was asked if I had watched Coco and I said no. I was told it was incredible and I would cry like a baby. Truthfully I didn't have high hopes because I felt it started out a little slow but OH. MY. GOODNESS. It lived up to the hype and it was so good you guys. Of course I cried like a baby and I'm so glad it was recommended to me. It just happened to be added to Netflix so it was perfect timing and I highly recommend checking it out if you can!

Cookbook


This book has also come up before on this blog when I mentioned some cookbooks that were on my radar. I was lucky enough to receive NYC Vegan for the holidays and I am SO EXCITED!!! I haven't made anything from it yet but all of the recipes look delicious and I can't wait to dive in. Of course some of them will be once in a while treats because they don't quite fit into my nutrition goals for chronic illness management but there are also plenty of recipes that do! I'm so excited to give it a try and I can't wait to do a proper review once I've tried a few recipes!

Food


I have been seeing Tteokbokki (Korean rice cakes) EVERYWHERE lately and they sound so freaking good. It is my intention to run over to H-Mart this weekend to pick up some rice cakes and gochujang so I can try making them myself. I found a recipe from The Viet Vegan (pictured above from her site) that I am going to try and I can't wait!


Technically this is a meme but it contains food and is hilarious so I had to share it with you. I can't stop laughing every time I look at it 😂

As you can see I've been catching up on my Netflix/movie watching a lot lately. I have not been feeling great (chronic illness acting up and not sleeping much makes you not want to do much) so I've been giving my body the rest it needs and relaxing and catching up on Netflix. I rarely ever watch TV and I don't really use my Netflix a ton so it was nice to just relax and catch up. What have you been watching on Netflix lately?

End of the Year Meals

Hey everyone! Happy New Year! I hope that you are all doing well and had a great New Year's Eve and New Year's Day. I'm still pet sitting for my brother so things have been a little out of whack for me and my routine has been more hectic due to caring for all of the animals. I have barely been sleeping because the dogs decide that 4am is optimum time to play games with me so I'm exhausted. I love the snuggles but a girl needs some sleep 😂

I don't have a ton to share with you in this post just because I've been all out of sorts for the past week. I'm going to be home starting tomorrow night so things should normalize again soon. For now I just have a few pictures to share of meals I've eaten to get rid of my processed stuff and transition into my whole foods plant based living.


I had some tofutti cream cheese left that I wanted to finish so I toasted up a poppy bagel and schmeared on some Tofutti and it was freaking delicious. I am not going to give up gluten or bread but I'll make better choices by choosing whole grain bread products that are better for digestion.


Sometimes a girl just needs some chocolate if you know what I mean. I decided some Justin's peanut butter cups were my best option and they were delicious.


I'm sorry that this is a recycled pic but I just haven't been photographing my oatmeal. I've been eating a lot of oatmeal because it is one of my favorite winter breakfasts and this is a fairly typical bowl for me. I usually add raisins too and sometimes I'll use nuts instead of nut butter but you get the idea.


I've been trying to finish up my gyoza and spring rolls so I made this delicious dinner of Trader Joe's Miso Ginger broth with broccoli, seaweed and the Thai Veggie Gyoza with some of the Veggie Spring Rolls on the side. These spring rolls are freaking delicious and I know down the road I'll be eating these again as a treat because they are just really delicious.

That's all that I have for you today! I am hoping to get to H-Mart, Trader Joe's and Whole Foods at some point between now and next Tuesday so hopefully I'll have tons of hauls to share next week! I'll probably be back Saturday instead of Friday this week so I can get some more pictures to share as well.

I also wanted to say thanks for the feedback about the e-book. I think I'm going to go ahead and write it. I feel like the worst case scenario is that I just have an e-book written and no one buys it and if that's the case it's ok. It doesn't say anything about me or my worth or my abilities but I really want to write it because I do think there will be some value. I'll keep you posted on it and if you read here you'll definitely be getting sneak peeks of meals since I do post about my meals here too.
