Random Stuff I Ate

Hey you guys! I hope that all is well. I am finally back home and getting back to normal. The stuff I have to share today is super random but I figured it was better than nothing 😀 I had a really nice relaxing weekend with lots of fuzzy snuggles with the fur babies that don't make me sick with allergies. I am still super tired because I never sleep much while I'm there and I had to take my aunt to physical therapy today at 7:30 am so I'm hoping I'll be able to lounge a little in the morning tomorrow. Other than that things are still pretty much the same!


It was nice and warm this weekend so I decided to treat myself to a bubble tea. I got my usual Peach Green Tea with bob a and 50% sweetness and it was delicious.


This was a totally random meal. I couldn't decide so I had a little it of everything 😂 I had some mini corn dogs, Morningstar nuggets, some veggie straws and grapes. This was really delicious and just the random meal I wanted. The grapes were perfectly crisp and sweet too, super refreshing!


As I mentioned earlier I took my aunt to physical therapy today. I had to be out of the house at 6:50 am so I decided not to worry about breakfast and that I would treat myself to a bagel with tofu spread and that's what I did. It was delicious as always. I think this is going to be a weekly treat since I'll be taking her at 7:30am for the next two weeks as well and the thought of getting up any earlier sucks lol.


It was chilly today so I decided to use a Starbucks gift card I had since the holidays to get a hot drink. My go to Starbucks drink is a tall soy hazelnut latte and it is so good. I'm glad I stopped to pick one up!


I was not able to take too many pictures of the fur babies but I got this hilarious picture of TJ lounging on my tummy. He loves to crawl right up on me and snuggle and I am always here for it. Normally he is on his tummy but this time he was on his back and I thought it was too precious not to capture!

So that's all I have today! I hope you all had a great weekend! I'm trying to figure out my budget to see how much grocery money I have to play with in the future. I am going to be eating out of my pantry this week because it's just too tight right now. Hopefully I'll get some interesting meals going so I can share them with you on Friday!

Day Off

Hey guys. I hope all is well! I am taking a day off from writing a proper post because I just haven't been able to grab any content. I'm house sitting and still in the middle of an awful flare so I'm really exhausted. Taking care of 4 animals mid flare has been challenging and I haven't been sleeping so I just haven't had any spare energy to focus on anything blog related.

I do have one photo to share with you. For those of you that have been with me for a while you have seen my beautiful niece Delilah grow up. I haven't shared any pictures of her in a while and I have one of her from this vacation she is on and I wanted to share it with you to show you how much she has grown!


I can't believe how quickly time has flown by! She was just a baby!

Anyway, sorry I don't have more for you. I hope to have something for Tuesday. I'm planning on a Netflix binge and snuggling with the babies all weekend and I'm hoping that'll be the medicine I need to get back into my groove.

Busy Weekend

Hey you guys! I hope that all is well, that you enjoyed whatever holiday you celebrated (if you celebrate anything) and that you had a great weekend in general. I only have two pictures to share (that aren't particularly exciting at all - I know, way to sell it 😂) but it was just such a busy weekend between Passover, Easter and my mom's birthday. We had a great weekend and I was happy to have my Monday off so I could rest and relax a little bit.

I decided to try and grab my produce from H-Mart this week and I think I went at an off time because it wasn't that great. I didn't pick up a lot because it just didn't look good but I will be able to use it along with what I have to make a few meals. I'll actually be house sitting for my brother later this week so I didn't want to over buy anyway and I'll get some more groceries when I go to carry me through.


My sad little grocery haul. I wanted to make some salads so I got baby butter lettuce because it was the only lettuce that didn't look horrible. I got a few granny smith apples to add to my salad, one zucchini, two potatoes (I'm going to give cutting those another try - fingers crossed) and some enoki mushrooms. On the plus side it cost about $8.


This is some asparagus and roasted potatoes. It's pretty indicative of what I've been eating lately. Passover is a difficult holiday for a vegan that just can't be bothered to cook at the moment. I usually hate Matzah but I've actually be enjoying it with some Earth Balance. I found a recipe for matzah granola that looks kind of awesome and I want to try it. I'll see if I have time.

Anyway, sorry it's so short! I'll try to photograph a lot more for my post on Friday! I'll be at my brother's house by then with the little fur babies so I'm really excited about having all of my little snuggle buddies! There is no better relief for chronic pain, anxiety and depression than the best little snuggle buddies ever and I can't wait!

Quickie Post

Hey everyone! I hope that all is well! Here we are approaching another weekend, hooray! We made it through another week. This weekend will be packed full of holiday festivities (we celebrate both Passover and Easter) plus it is my mom's birthday so it'll definitely be busy. I'm glad I have Monday off because I'm sure I'll be exhausted after all of it. The migraine is still hanging in there and my body pain is pretty brutal too so hopefully I'll get through everything without feeling too awful.

Today's post is going to be short because I didn't really take too many pictures. I basically have a lunch, a snack and a dinner. I figured it was better than nothing so here we go!


So for lunch yesterday I had a peanut butter sandwich (I wish I liked pb & j because it is so dry but still so good) with a large honeycrisp apple.


As a snack I had one of the Thai Peanut Primal Strips and it was delicious. I love these things.


Dinner was super random. I had some mini corn dogs and some bow tie pasta with some Earth Balance. I really wanted corn instead of the pasta but I didn't have any so this was kind of a last minute substitute. I'm not really a fan of pasta so I rarely eat it but I did enjoy this meal!

Vegan Market Haul & Stuff I Ate

Hey everyone! I hope that you are well. I am hanging in, migraine and all. I did a whole lot of nothing this weekend and I enjoyed every second of it. The only thing I did do was take a quick trip over the the Sweet To Lick Market and Bakery (the only fully vegan market on Long Island and the bakery that opened first) to grab a few fun things. I didn't do a proper grocery shopping this week but I splurged on some items from the market as I will be going into super budget mode now. There have been some changes happening behind the scenes which unfortunately means I really have to be careful with my budget so in the future you'll be seeing more budget friendly eats.

Before that though we do have an AMAZING haul from the market and a few fun meals from the weekend.


So I grabbed some fun stuff! I got the vanilla cocomels (OMG SO GOOD!), Wayfare Chocolate Pudding, Follow Your Heart American slices (grilled cheese you guys!!!), some of my favorite Thai Peanut Primal Strips, a few vegan chocolate eggs (because chocolate), a mint carob cup that was on sale, individual sized bags of Vegan Rob's Cheddar Puffs and Wild Mushroom Kettle Chips and some Field Roast Mini Corn Dogs. It was kind of dumb timing for some of it because Passover is coming up but oh well.


I ran next door (because why wouldn't I, it was right there!) and got this AMAZING Rocky Road bar. This is one of my favorite things that they make and someone suggested to try warming it up and OMG. It was INCREDIBLE.


I got these from a different store but I was craving kale chips and Justin's cups so there you go.


This was a random but delicious dinner that I had of mini corn dogs, hash brown patties and the most delicious, crispy grapes ever. So so good.


I had a small hummus snacky plate with dolmas, grape tomatoes and flatbread.


You guys. This grilled cheese THOOOOOOOOUGH. I made it on multigrain panini bread with the Follow Your Heart Slices and it was amazing. I had some kale chips and a small pink lady apple on the side. Such a delicious meal.

So that's what I have for you guys today! I'm looking forward to finding some budget hacks over the next few weeks and sharing them with you. Passover also starts on Friday night so I'll be doing my best to figure that out, ha! I should probably take some time to round up some recipes this week.

Stuff I Ate

Hey everyone! I hope that you are well! It's finally almost time for the weekend and I couldn't be happier. I'm super tired this week so I'm feeling a lazy weekend in my future. I don't really have any plans so I'm not sure what exactly I'll do (I don't even know where I'm going to go grocery shopping this week) but I'm going to try and do something interesting. No promises though 😉 I think it's supposed to be a rainy weekend too so my big adventure will probably turn into a Netflix Binge 😂

For today's post I just tried to take as many photos as I could to share with you. This week has been so lazy in terms of meals and I'm ok with it. I try to think ahead to make things easy for myself and it worked out pretty well this week.


I had a lot of cereal this week… I typically have it for breakfast but once in a while I'll have it for dinner if I didn't already have it for breakfast and was too tired to think about making dinner. I'm not mad at cereal for dinner though, it's pretty awesome. 


I grabbed some fresh veggie sushi rolls from the store on Wednesday and I paired it with my Trader Joe's Mango Kombucha. This was also a delicious meal.


Most of my meals was some combination of the veggies I prepped over the weekend. This one had the potatoes, brussels sprouts and asparagus. I didn't photograph all of these meals but wanted to include one to show you. 


I decided to get myself to a pumpernickel bagel with tofutti and it was delicious, as always. 

Since it has been warming up a bit I've been enjoying some iced coffee in the morning! I always brew a cup the night before and let it cool then put it in the fridge to enjoy in the morning. I didn't photograph it but iced coffee season is really exciting so I figured I'd share that with you 😂

Trader Joe's Haul & Meal Prep

Hi everyone! I hope that you are all doing well and having a good week and that you had a great weekend! The weather was incredible this weekend so I definitely made sure to get out and enjoy the warmth and sunshine a little bit. On Sunday I really wanted to get my bubble tea so I went out and did that. After I got my tea I took a ride to my favorite spot on Long Island and just enjoyed my tea and the beautiful day. It wasn't a ton of time that I spent out and about (I'm still not feeling great) but I really did enjoy getting out and doing that. I can't wait for the Farmers Markets to open because that is another ride I really enjoy on a Sunday morning.

Before I went on my bubble tea run I went to Trader Joe's. I'm not quite sure why but Trader Joe's has become pretty unbearable even when they first open at 8am. I'm either going to have to find another time to go or figure out something else to do because it is so frustrating to be in a place that is so crowded and especially crowded with obnoxious people that leave their carts in the middle and have zero awareness of what is going on around them. Maybe I'll just go to Trader Joe's specifically for their specialty items that I get and just get my produce at H-Mart. I'll figure it out.

So let's get into the haul and some pictures of meal prep!


Grape tomatoes, green onion, brussels sprouts, asparagus, tater tots, honeycrisp apples, 2 Sunbutter cups (they finally had them and they are AMAZING!!), Mango Kombucha, dolmas, Mediterranean Hummus, teeny tiny potatoes and butternut squash zigzags.


I had to photograph my amazing bubble tea. Large peach pulp tea with 50% sweetness and boba. This was basically my brunch, ha!


For meal prep I roasted up all of my veggies. Here is the brussels sprouts and asparagus.


I have been craving squash and I knew that I just wouldn't be able to cut it. When I saw the butternut squash zigzags I knew I wanted to try them. I hate that I have to spend extra on prepared produce but I guess these are some concessions I have to make.


I roasted up my teeny tiny potatoes as well. They look so good and I think all of the veggies will combine into some delicious meals!

What I Eat In A Day When I'm Lazy AF

Hey everyone! I hope all is well. Happy Friday! Another week has come and gone. I've gotten increasingly more exhausted and have had a headache pretty much all week so I'm sure you can imagine I'm over it and ready for the weekend. I almost didn't have anything to post today because I just couldn't really be bothered with meals and taking pictures but I forced myself to photograph my meals yesterday. I thought I'd share a day's worth of meals when I'm lazy and don't feel like making an effort with my meals.


For breakfast I just had a bowl of the Nutty Toffee Crunch cereal from Trader Joe's with some almond milk. This cereal is so good and was a perfect low maintenance meal.


For lunch I had my favorite soup that I made the night before. This soup comes together quickly with minimal effort and is another really great comfort meal when you just can't be bothered to actually make something.


Dinner came together really quickly too. I cooked up an Aldi chickenless patty with some chips and a small pink lady apple. You guys. These chick'n patties are SO FREAKING GOOD. They were such a great purchase and I'm really glad I got two boxes because I know that they will be perfect for a quick meal either on their own, in a sandwich or wrap or in a salad.

So that's what I have for you today. Sorry it's so blah and low energy but we all have those days I suppose. I'm looking forward to a mellow, relaxing weekend. I think I'll head over to Trader Joe's on Sunday and I'd also like to get a bubble tea at some point. Otherwise I plan on relaxing and trying to get rid of this weeklong migraine I've had. There will also be a lot of Netflix and Youtube in my future 😉 

So I have a random question as well. I am going to pick up a protein powder so I can make quick protein drinks for when I just don't feel like eating anything. A lot of vegan protein companies feel the need to add every single fruit and vegetable to their powders which is nice in theory but when you are allergic to orange you can't use them. I've been thinking about trying 22 Days protein powder because it only has like 5 ingredients. One of the ingredients is flax so I'm guessing there may be some omegas in there too? Anyway, has anyone tried this powder, and if so, is it good? If you liked it, should I go for the chocolate or vanilla flavor?

Aldi Haul & Stuff I Ate

Hey guys! I hope that all is well and that you all had a great weekend. Mine was pretty good and the perfect combination of productivity and relaxation as I tried to just rest my body during this flare. I'm feeling a bit better but the exhaustion is getting to me. On the plus side, I've been able the sleep a lot more which is definitely helpful.

I did get to Aldi as I had hoped and got a pretty great haul! I obviously had to share it with you so I have some pictures of that. I also took some pics of food I ate and I really wanted to share the lunch I had with my friend yesterday. It was so nice to see her and I'm so glad we were able to get together!

Up first I have the Aldi haul. I am going to put prices there so you can get an idea of the price as compared to regular stores.


Almond Milk ($2.29), Wheat Thins ($1.69), Green Pea Crisps ($1.39 for a pretty large bag), VEGAN CHOCOLATE FREAKING CAKE aka the reason I went in the first place ($7.49 - pricey for Aldi, average for vegan cake), 2x Chickenless patties ($3.29 each), Veggie Chips ($1.69), 2x garbanzo beans ($.69 each), 2x Vegan Cream Cheese ($2.39 each), Vegan Mozzarella Shreds ($3.29).



Vine Tomatoes ($1.49), Zucchini ($1.69), Asparagus ($2.39), Bag o' mini potatoes ($3.89), Mushrooms ($1.09), Bag of pink lady apples ($3.69).

As you can see, some of the price are amazing and some are fairly average. The pricing on the vegan products are very good, particularly compared to name brands like Gardein. I heard that the cream cheese is basically like Tofutti and that is a great price for tofutti. Tofutti also happens to be my favorite vegan cream cheese so double win. That's why I picked up 2 of them. I also have only heard great things about chickenless patties which is why I picked up 2 of those. I've heard mixed reviews on the shreds so I only grabbed one of those.


We (I went with my mom) went first thing in the morning so when I got home I had breakfast and tried the cream cheese and it indeed was basically Tofutti. That was a great deal and I'm glad I picked up 2! The date on the container was really good so it should last me a while.

As I mentioned, I met up with my friend for lunch yesterday. There is a new vegan/vegetarian restaurant that opened fairly near me that I haven't yet had a chance to try. She was down for trying some veg food so we headed over to Zen Garden for lunch.


They have a prix fixed lunch menu that comes with an entree, soup and rice. I was torn between the hot and sour soup (typically my favorite soup) and the wonton. I chose the wonton soup because my meal was going to be spicy (supposedly, ha) and it was really light and delicious. I ate both wontons but left about half of the broth to save room for my meal!


For my entree I chose the Eggplant with "Chicken" in Garlic Sauce and subbed out the bell peppers for broccoli. It was DELICOUS!!! I came with rice and I chose white rice. The veggies were cooked perfectly, the soy chicken was amazing and the sauce was really great. It wasn't super spicy but it had enough of a kick that it was satisfying the spicy craving.


Despite being stuffed we were right across the street from my favorite bubble tea place so we popped over to grab a bubble tea! I got a medium (which is the smallest so it's funny that they call it a medium) peach pulp tea with 50% sweetness and boba. Such a great way to finish the meal.

We caught up and had a great time in general. I love hanging out with her and hopefully we can make it a more frequent occurrence. 


I wanted to have a lighter dinner that night so I made a snacks mediterranean plate. I had a few carrots, the last of my dolma, a small pink lady apple, some tomato and hummus. It was delicious.


I made another bento for lunch today and had to take a picture to share with you. I have the leftovers of my lunch yesterday and added my last giant honeycrisp apple and some raw almonds. I'll space all of this out over the course of the day but it all looks so good and I'm very excited to enjoy all of it.
