Stuff I Ate

IHey guys! Happy Saturday! It's been a rough week for me but I'm feeling better and more optimistic now. In the midst of all of the feels I still managed to take a few pictures of some meals to share with you. Some pictures are better than others but hey, you win some you lose some. I've been really enjoying getting back in the kitchen and making some yummy meals and I'm looking forward to expanding on that even more and hopefully I'll be posting some more recipes in the future.

Check out the meals!


This was delicious. It is Tofurkey, hummus, tomato, lettuce and pickles wrapped in one of the Trader Joe's Lavash wraps. I had an apple on the side. I love pairing fruit with sandwiches for some reason.


You guys. This salad was everything. It is a Vegan Chick'n Caesar Salad and it was so good. I used the Just Caesar dressing and some Gardein chickenless tenders and some random vegan croutons I found. I'm an idiot and got rid of the packaging for the croutons so I don't even remember which ones they were but hopefully I'll recognize them when I see them again.


Yay, another Bento Box Lunch! On the left I have a small bed of Jasmine Rice with some of my stir fry on top. There is obviously fruit in the box to the right :) I'm ready for strawberries to be back in season. We are getting there but they still aren't amazing.


This is a terrible picture of a toasted cinnamon raisin bagel with tofutti spread. I made this one at home. It was delicious but just not very photogenic. It's ok, we love her just the same. We don't judge based on looks.


Finally, this was amazing. I didn't put enough water to help the Everything Bagel Topping adhere to the pretzel but I assure you it tasted just as delicious scooped up with the ripped up pieces of pretzel. If you ever try this topping on a pretzel instead of straight up salt I assure you that you'll never go back.

So there you have it, some delicious things I've enjoyed over the past week. The stir fry made about 4 good sized meals which was perfect. I'm definitely looking to get back into doing more meal prep for the week because it really helps me stay on top of it and saves so much time. I'll have to take some time tonight to see what I can make for next week.

Wow! Lots of beautiful deliciousness! I am in desperate need of a TJ's run, with all of this good looking stuff! The Chik'n Caesar sounds perfect, as does the wrap.

It is almost berry season - just another 6- 8 weeks or so! I have really been slacking on the creative meal prep (and posts - I know - but I will do a catch up tomorrow!).

Ha ha! Yes, we love our bagels for what they are - not how they appear!

I miss the Lavash bread so much! It's the absolute best for wraps!! I need to try the everything bagel seasoning. I love big soft pretzels!! I hope this week is better than last for you!

I want "Stuff I Ate" to be the title of my autobiography. I just had a vegan Caesar salad because after seeing yours, my stomach demanded the same followed by several blood oranges I spent way too much for at the farmers market but again, damn stomach.

Thanks Ingrid! Trader Joe's has really been upping their game with their new products. So good and so inexpensive!

I can't wait for summer produce!! It can't come fast enough! Watermelon and berries and cherries (oh my! ha).

Aww yeah it definitely is the best for wraps! I might make lavash pizza one night this week too. Definitely try the seasoning! It is really inexpensive and I think it would last a while! The pretzels are so good.

Haha yes, that would be a good title! Oooh I love that you had the salad, which Caesar dressing did you use?

I don't think I've ever had a blood orange! They are so beautiful though. I've always wanted to try them. I'll add them to the list.

I think you should get yourself a pretzel ;)

I used the Follow your Heart Caesar. Love their dressings. Citrus is so sweet right now :)

That picture of the Cinnamon Raisin Bagel is a masterpiece! You have got to be kidding me. What I wouldnt give for that thing!

For some reason I have NEVER seen Follow Your Heart dressings in the store! I guess I just don't know where to look for it. I meant to get clementines from the store this weekend and totally forgot!

Aww haha thanks. I have to admit I'm spoiled by my access to the NY bagels all the time. I especially love that so many places are now offering tofu cream cheese too.

I hope he loves them when he tries them! Tell him to grab that seasoning, I know you'll love it!
