Anyway, I made a trip to Trader Joe's on Sunday and figured I'd share the haul with you!
For produce I got some romaine lettuce, baby spinach, potatoes, broccoli, baby carrots, diced onion (lazy as fuck) and grape tomatoes.
I picked up a few grocery items as well. I got some of the Lavash, the high protein tofu, some soy creamy cherry chocolate chip ice cream, mediterranean hummus (still the best store bought hummus in my opinion) and some frozen blueberries.
After Trader Joe's I decided to do a little meal prep for the week. Here's what I made:
I made a HUGE tofu scramble with the high protein tofu, onion, broccoli and spinach. I seasoned it with Trader Joe's onion salt and some black pepper. It's so good you guys. I had the onions in there the longest and they got all brown and caramelized and they made the whole thing taste amazing! I'll be able to get a ton of meals out of this too.
I really wanted some redemption after my last muffin fail so I decided to make some blueberry corn muffins. They are better than the last muffins I made (I mean they aren't green yet so that's a step in the right direction) but they are so dense and pretty dry. They are edible and it's nothing a little Earth Balance and maple syrup can't fix but they aren't amazing. At least they look pretty. The blueberries gave them a pretty purple swirl and I'm not mad at it.
As I mentioned I'm really trying to be better about planning my meals to make my life and decision making a lot easier for myself. I got this new insert for my planner and it is great because you can plan your meals and write your grocery list in the same spot. I'm just hoping that I'll actually use it!
Are you a meal planner? How far in advance do you plan? What happens if you don't want to eat what you've planned. That tends to be my biggest problem.

I have stopped trying to meal plan because I never want to eat what I've planned. I'm interested to see if you use your insert and if it helps.
The muffins look great! I've been wanting to try making muffins but I don't have a muffin tin!! It's on my list though!
I’ve eaten grilled cheese sandwiches for the past two nights so the three hour cereal-for-dinner dilemma cracked me up because it’s so relatable. I don’t meal plan but I should. I wander around Trader Joe’s or the grocery store and think “What have I not eaten in a while” or “What new products does TJ’s have?” Then I wonder why i’m always in a food rut.
Your tofu scramble looks so great (and green)! Glad to hear the muffins are improving, too! :)
Meal-planning stresses me out a lot, haha, so what works best for me is a looser structure for the week: one new recipe, any favorite recipes I feel like making again, the leftovers from those, and quick/easy meals on hand to fill in any gaps.
That's the same for me. I always plan stuff that sounds amazing and then I'm like meh, I don't want that.
Oooh yes, muffins are so fun! I just hope that mine one out better the more I make them. I need to stop making adjustments and just follow the recipes as they are.
Grilled cheese sounds good to me! I can't with the indecisiveness anymore. It's so annoying. Food ruts are annoying but hopefully we'll both get out of it soon!

Ha! If I didn't meal plan, I would also take three hours to decide on cereal. I'm the most indecisive person ever. I plan all my meals for the week on Sunday night and write them on a menu planning white board so I can always erase and change them as needed. And that happens a lot! Like if someone invites me out to dinner or I end up eating vegan snacks from our cafe at work for lunch. I have a hard time when things are written in pen (like in my planner!), but the white board helps with that. Good luck! Also, sorry for your bad muffin luck! Third time is a charm???
I love the idea of a dry erase board for meal planning! I think even if I meal plan the night before in my insert it will help because it just takes so long for me to figure out what I want. If that doesn't work I will definitely try the white board!
Haha I need to stop tweaking the recipes and just make them as they say!
I meal plan my lunches mostly, but make sure to have two or three options for breakfast and dinner, so I don't get bored. Now that I've fallen into a regular workout routine, the nights that I'm at the gym I have my dinner made ahead of time so I can still eat before 6:30pm (trying to keep meals early for optimal digestion!).
I'm going to have to try your tofu and veg scramble - it does sounds so good! I think the muffins look delicious, and a little topping does go a long way.
That makes a lot of sense, especially since you don't have a lot of time in the morning. Meal planning shouldn't be so hard, haha. I think it is my indecisiveness more than anything.
