This week I have a few meals (nothing crazy) and decided to show a few of my planner layouts as well. It's funny, the planner stuff has been mentioned a bit lately in my comments and Bianca even mentioned them in a post so I decided that since it has been a while since I've shared some layouts I'd show a few of my recent favorites!
This is the most simple stir fry ever of Chinese Eggplant and rice with some garlic sauce. It was so good.
A slightly more exciting stir fry that has tofu and broccoli in addition to the eggplant and rice.
Of course I had to have some veggie rolls at some point this week.
Sorry I didn't photograph a ton of meals since Saturday but it's been a bit hectic. So to make up for it I decided to share four planner layouts below. For anyone that is new here I do decorate my planner because it makes me happy and it makes me more likely to use it. I only decorate my weekly and monthly calendars but I also track meals/exercise, finances and I also have notes sections for various things. It's just a fun thing that I do and for the hour I spend on it each week it makes me happy and allows me to be creative. In case anyone is curious, all of the sets happen to be from a shop called Creating & Co. She is my favorite :)
This was the week after Beauty and the Beast came out and I was going to see it on Monday but I had to push it to the following Monday. I LOVE this. It is so cute and a perfect way to remember when the movie came out.
I'm obsessed with these colors. This is a neon coffee themed week and it's so cute. The color combination is beautiful.
I saved this set for the week of Mother's Day because I thought it was perfect. It is so beautiful and springy and just makes me think of Mother's Day. I really loved the way this one came out.
Finally, this is this current week's layout and it is a fitness theme! I thought it was perfect to coincide with the start of my fitness journey and these colors are amazing.
You'll notice I only use my personal sized planner now. I don't really have a ton going on in my life so this is the perfect sized planner for me. In addition, I have multiple sections in it and it allows me to keep everything in one place. It also brings down the cost of stickers tremendously because I buy fewer pages and the one set lasts two weeks. I'm really happy with the change and being able to budget less and get more out of it.

I really love looking at your planners. I've never been much of a planner, but it seems like it is a relaxing way to organize your life.
Since I work out at home I don't use sneakers so I don't know anything about good vegan shoes. I hope you can find some that are reasonably priced!!

I feel like I should check out what Michael's carries when they have stickers on sale. I love the pages you've shared - I'll need to peep that company you mention!

Squeal!!! How cute is that little cartoon beast? I love that! I really loved Saucony shoes when I used to run and thankfully they make vegan ones with hemp and canvas. I've found them on Amazon and Moo Shoes. The selection in sizes and colors can be really limited on Amazon but if you check periodically, you can sometimes get a pair for around $50.
Hi Trixie! It was so easy!! I just cooked up some Chinese Eggplant using water instead of oil to keep it from sticking. I actually cover the pan while it is cooking to let it steam a bit and cook faster. For this stir fry I added my rice to the veggies and just mixed with leftover garlic sauce I had from Chinese takeout (when you order steamed dishes you get the sauce on the side). I normally make my stir fry with a sauce made from hoisin, tamari and garlic powder. It's so easy. I can do a proper recipe for it if you'd like.

Thanks! I always get concerned about whether or not something is vegan because it is so hard to tell. Any search I do for vegan gym shoes turns up really expensive results.

Sadly things are picking up. Summer and fall are always the busiest seasons. It's not as busy as it has been in the past but there will be a lot more editing now that the season has started. Thank you!

That's so funny that you mention Saucony, it's the only one that I know has specific vegan options and isn't really expensive but I didn't know how they would be as gym sneakers. I'm glad to know you liked them, I'll have to look into it! Thanks for the recommendation!

I really like them as gym sneakers - sorry I forgot to mention that. I have two pairs that I alternate using at the gym and on trail walks. Looking at the tread wear-down, mine need replaced about every six to eight months.
I found some Reeboks on Amazon for my trip $70. All man-made materials.
