More Stuff I Ate

Hey you guys! I hope you had a great weekend! Mine was super super busy so I don't have a ton of meals to share with you but I figured that I would just share what I have! Did you guys end up doing anything fun? I ended up having FOUR appointments yesterday (if I can offer any advice it would be DON'T DO THIS!!!) and it was exhausting. I was out from 8:30am-7pm and I basically collapsed into bed when I got home.

So, as I mentioned, I have a few things to share with you today. I'm also going into major budgeting mode so I can save some money so I'm going to be scouring Vegan Peace's blog My Cat Loves Daiya for her best budgeting advice. I'd love any advice you have as well! It is going to be pretty strict ($30-$40 per week which means no fun convenience products) and I'm sure I will end up including a pantry challenge in this to use up some of what I have to.

Anyway, enough of my babbling, let's check out the goods:


I was craving some pizza so I made myself a small flatbread pizza and paired it with a caesar salad. It was super good and perfect for a pizza craving.


This is a sad picture of a simple and delicious meal of a Boca Burger and some chips.


Grapes were on sale so I put some in a container and snacked on them for breakfast with some (unpictured) toast with earth balance at work.


A delicious chick'n caesar salad all ready to be devoured at work. As I've mention before I dress my salad ahead of time because I don't really mind if it is a little soggy by lunch time. I guess I'm weird.


Finally, I've been making iced coffee at home so I can have decaf and so I can save money. I've been enjoying it in this ADORABLE 10 oz steel tumbler I got from my friend's shop, Creating & Co. She also has larger tumblers (I have one of those too, I use it for water). I highly recommend them, they are great quality and super cute! They are in the lifestyle section of her site. As I've mentioned before, I am friends with the owner of this business but it does not change my opinion of her products. I would NEVER recommend something I personally do not love (as you can tell from my opinion about popular brands such as Kite Hill and Miyoko's).

I just found grapes on sale too! Such an amazing snack! I've been making notes and planning a budget post for awhile now! You can totally do it. I know I've mentioned this before but sometimes I get discourage over being on a budget, but then when I look back on my meals I'm pretty shocked by what delicious food I ate!!
I love your tumbler!!

The tumbler is so cute! Sadly I do not like tumblers and I have too many mugs. She has so many cute stuff though!

Yes, grapes are the best!! Yay, I can't wait to see the budget post! I know if I stick to Trader Joe's I should be fine. :)

This weekend I ended up rearranging the furniture in my kitchen and it made me inordinately happy when I finished. It feels so much more open now! And I want to go in there and cook things!

I have a variety of ways to save money on food, most of which you probably have heard a zillion times: Plan your meals, plan your shopping trips, don't shop hungry, stick to the list, cook more things like beans than those tantalizing Gardein things, shop in season, go to markets with the better deals as possible, etc. And be creative about using up the stuff you always end up having more of than you'd planned. (I just went looking for a pepper salad because I have so many peppers, for example.) Lately I've been doing a lot more cooking on the weekend and freezing leftovers when possible, and I've also been trying to cook more of my breakfasts (I bake a quick bread or prep overnight oats) rather than buying cereal and things.

I like The Stingy Vegan blog for ideas. I recently made her Spanish Lentil Stew and it was amazing! I couldn't get all my ingredients as cheaply as she did but it was definitely one of my less expensive options. If you haven't seen her blog, check it out: https://thestingyvegan.com/

And of course, there's also my own, probably pretty obvious method, if you've seen my blog, and it's akin to your coffee tip: Pack your own lunch every day, and also bring snacks and tea and stuff in case you get peckish. I keep non-dairy creamer in the work fridge and have tea on hand, in addition to my lunch and snacks. I don't even consider buying lunch or a snack out because I've never made that an option for myself. You can do it!

And Vegan Peace has a point, too: Blogging helps you look at how well you're eating and will make the challenge a little more fun!

Thank you so much for the tips! I've definitely been packing my lunches and making my own coffee and stuff like that. I've even been bringing my own water with me in reusable bottles because even that cost can add up. I'm going to take inventory of my pantry this weekend and meal plan based on what I have in there. I will definitely check out The Stingy Vegan, thanks for the rec!! :)
