Stuff I Ate

Hey everyone! I hope that all is well! Another week is ending and I know I'm ready for the weekend. Just two more days and then it is here. I don't think I have any plans for Sunday and Monday will be crazy busy. Do you guys have any fun weekend plans? Let me know, I'd love to be inspired by the fun things that you are doing!

Today's post is going to be another roundup of stuff I've been eating this week. I have been thoroughly enjoying my meals and I'm excited to share them with you.


It has been a long time since I've picked up some veggie rolls from the store for lunch. They are typically $6.49 for the rolls which I understand is a pretty good price. I picked these up on Wednesday and it was "Sushi Wednesday" and the rolls were on sale for $5. You can tell that the rolls are significantly smaller which would be how they make up for the price difference. It kind of annoys me because it just feels misleading. I would rather pay the $6.49 for the regular sized rolls but that's just me.


You know I need to have some watermelon in my life. This is a pretty large bowl (it's deep) and it was really sweet and delicious.


I put my Spinach and Feta Pinwheels in the freezer to keep for quick weeknight meals. It's so easy to pop in the toaster oven to warm up while you make a quick salad or fruit salad on the side. This meal was perfect, I loved the pinwheels and salad combination.


Another vegan chick'n caesar salad with some flatbread on the side. Super delicious and a very easy weeknight dinner.


You know I love my Mediterranean plates! Also a perfect meal that comes together quickly and is great for a hot summer night.


Finally, I've been enjoying some iced coffee on these exceptionally hot days. I loved iced coffee season!

That watermelon looks delicious - wonderful on a hot summer day! All of the food looks yummy. That Mediterranean plate looks yummy too - those tiny tomatoes look very tasty. I'm having an iced coffee myself right now as i type. Best weekend wishes to you as well!

Snack plates are where it's at! I've been doing fyh slices with crackers and radishes, so quick and easy!

The heat is FINALLY breaking tomorrow (I'm in Boston, so I think we share weather patterns), so I'm going to take advantage and use the hell out of my oven :D focaccia topped with caramelized onions, roast potatoes, and seitan ribs - it's a food prep party! Other than that, just going to a meetup to try and meet more people.

I love the veggie sushi! A place near me makes the most amazing sweet potato tempura sushi.

I had plans for this weekend but they fell through due to pending thunderstorms, so I'm planning for a lazy weekend at home instead, with lots of yoga. I may explore a new health food store that opened nearby. I'm on a quest to find the "No Beef" Better than Bouillon paste. It probably isn't there, either, but hope springs eternal, I think!

If Monday is going to be busy I like to have a quiet Sunday and go to bed early. It seems to make the week go better. I hope you have the kind of weekend you need.

I totally agree with you about the sushi. They should offer the regular rolls for the regular price and the sale rolls for people who prefer that. And it's definitely misleading!
The pinwheels and salad just looks like my kind of meal! I bet it's so nice to have such a delicious treat in the freezer!
I have an interview toay. Not exactly fun, but if it goes well it could make the rest of the weekend much better!
I might have to have an iced coffee today, that sounds amazing!!

Thank you! Yes, it was so refreshing, it has been so brutal lately! Grape tomatoes are so awesome with hummus, one of my fav snacks! Yay for iced coffee!

Hi there! Snack plates are DEFINITELY the best! I haven't had cheese and crackers in so long, I definitely need to change that! What a great snack. Add some grapes and extra yum!

It is POURING here and definitely has broken the heat! Food prep sounds great, I totally know what you mean about getting that oven time in while you can! The focaccia sounds amazing and it sounds like you are going to have so much yummy stuff in your fridge for the week!

Omg the storms are already crazy! We had a flash flood situation here already (naturally I was on my way to work in the worst of it) but a lazy home weekend sounds pretty awesome. I hope you find the no beef bouillon! I'm sure you can order it online if you can't find it in store?

I'm hoping to be mellow tomorrow. Monday is like my Sunday and I just have a ton of appointments which isn't terrible but certainly not relaxing. I'm hoping to get some meal prep done and some decluttering done as well :)

Right?! I was like what is this nonsense? At least it was fresh and tasted good.

The pinwheels and salad were amazing, I'm glad that I decided to freeze them. They are a great quick meal.
