Stuff I Ate

Hey everyone! I hope that you are all well. It is almost the weekend and I couldn't be more thrilled. This will certainly be a self care kind of weekend where I continue to declutter my life, rest my body and this weekend I also get to catch up with a friend of mine. We will be hanging out on Monday and I'm thrilled. I have missed her and it will be nice to catch up. We'll go out for lunch and I don't know where but I'm looking forward to sharing some of the awesome vegan food Long Island has to offer.

I'm not feeling great physically (I'm mid flare right now) and I'm working on adding in some probiotics into my daily routine. I am also looking for a vegan source of an Omega 3 supplement. Everything I found so far has some sort of orange sourced ingredient which I can not have due to my allergy. I have contacted a company to ask the source of their beta carotene and if it is not orange then I will take that one.

Anyway, let's take a look at some of the awesome meals I've been eating lately.


You guys. The baked oatmeal is freaking glorious. It is very dense but it is delicious and the chocolate is a game changer. When you warm it up the chocolate gets all melty again and it's awesome. I bet it's great with some plant milk on top too. I used this recipe from The Healthy Maven. I just used pecans instead of the walnuts, added the chocolate and didn't put the banana on top.


Like I said, I'm trying to be more consistent with my probiotic intake. I love the mango kombucha from Trader Joe's so I have been drinking this. I also have a supplement I can take if I need and I also have raw apple cider vinegar that I'll mix with water if that's what I feel like doing for the day.


You know I love my bagels and this one is toasted (from the freezer, you know how I feel about toasting fresh bagels) with half Earth Balance and half Tofutti. I enjoyed this with a cup of coffee with the Caramel flavored Silk Almond Creamer. Really delicious meal!


I finally made another bento box in my Monbento! This one is pretty similar to my staple box and it includes dolmas, grape tomatoes, baby carrots, hummus and some honey crisp apple slices. This meal is so fresh and tasty and really east and quick to put together.

As you can see, I didn't photograph any of my dinners. As I mentioned earlier I'm mid flare and I'm just so exhausted by the time I get home from work I barely even want to eat dinner, never mind dealing with photographing it. You saw a lot of it anyway with the meal prep so I figured it wasn't a huge deal.

On a fun note, I'm hoping to get to Aldi this weekend for my groceries! Wherever I end up I'll make sure to photograph it and share it with you.

Ugh, i hope that the flare subsides sooner than later. A chill weekend sounds like what you need.
I’ve taken Nordic Naturals before, they’re a bit expensive but really high quality. Their omega-3 doesn’t look like it has any orange ingredients

Although i drink a lot of kombucha (since i make it to support my addiction!) I’m also a big fan of miso as a souce of probiotics so I’ll sip some miso broth for a savory drink or use it in salad dressings. I actually just read an interesting research study showing that almonds (with skin on) either raw or roasted had a ton of prebiotics. But somehow not as almond butter or almond milk.
I haven’t been to Aldi in forever, the manhattan location was kinda disappointing although i do remember buying some fun european condiments.
I’m hoping to do a lot of citibiking this weekend, i love a long ride down the west side highway. And my bff’s parents are in town so there’s a group brunch situation at a very un-veg friendly restaurant where I will likely get a plate of leaves or fries as my options (plan B it’s near nish nush so I’ll just go there after brunch for actual food)

I always love seeing your bento boxes, and of course stuffed grape leaves! Every time I buy them I think of you!

Julie: Thanks! The baked oatmeal is delicious. I'm so excited to go to Aldi! I hope I can find everything I want! I know they cycle through things quickly.

Ttrockwood: Thanks, me too. I'm definitely ready for a chill weekend. I'm so so tired. I looked at those but chose Ovega-3. It was only after I got home that I saw the beta carotene and got a little concerned. I'm just waiting for a response from the company and hopefully I'll be able to take them soon. I just get overly paranoid. I don't know how I forgot about miso!! I could totally make my soup with some miso too. I researched the almond thing and it does look like it has prebiotics. The timing is perfect because I just got a big bag last week, I've been craving them so much! Maybe it was a sign :) Oooh sounds like a great time biking down the west side highway! I hope you'll be able to find a delicious brunch option. Breakfast is my favorite meal of the day but going out for breakfast as a vegan is hard and it's always disappointing when the options are nonexistent.

Vegan Peace: I don't know why I don't use my bento more often, I need to get back into the habit! Yay for stuffed grape leaves! Thanks, it's crappy but I'll be ok. I'll just make sure to be kind to my body over the weekend. Thank you! I can't wait to see her!

Your bento box is super cute, I love all the little snacky things inside.
I worked yesterday (Saturday), but I have today off and the weather is finally a little bit cool and I went to yoga and I actually feel somewhat content, so that is pretty good for a Sunday!
I hope your weekend is treating you well, and you get the rest and self care that you needed. <3

Susan: Thank you, I love the bento box, I definitely need to use it more often. I work Saturdays too so I feel that pain but a relaxing Sunday always makes it better. Thank you so much, I did have a great weekend <3
